Ingredients

  • 1 cup plus 2 tablespoons flour
  • 4 teaspoons baking powder
  • 2 teaspoons sugar
  • 3/4 teaspoon salt
  • shrimp, canned crabmeat or lobster
  • 2 medium potatoes, diced
  • 1/2 cup peas
  • 2 medium carrots, shredded
  • 1/2 cup water
  • 1 egg
  • oil for frying

Instructions

  1. Beat the egg in a mixing bowl.
  2. Add water, sugar, and salt to the beaten egg; mix well.
  3. Combine flour and baking powder, then sift into the egg mixture.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Add the diced potatoes, peas, shredded carrots, and seafood or crabmeat, folding gently to incorporate.
  6. Heat oil in a deep frying pan or wok until hot.
  7. Drop spoonfuls of the batter into the hot oil and fry until golden brown, turning once to ensure even browning.
