Ingredients

  • 1 1/2 cups water
  • 1 cup cream-style cottage cheese
  • 1/2 cup honey
  • 1/4 cup butter or margarine
  • 5 1/2 to 6 cups all-purpose flour
  • 2 1/2 cups whole wheat flour
  • 2 tablespoons sugar
  • 3 teaspoons salt
  • 2 packages dry yeast
  • 1 egg

Instructions

  1. Heat water, cream-style cottage cheese, honey, and butter until the temperature reaches 120° to 130°.
  2. Lightly spoon flour into cups and level off.
  3. Combine warm liquid, 2 cups unbleached flour, sugar, salt, dry yeast, and egg in a large bowl; beat for 2 minutes at medium speed.
  4. By hand, stir in remaining flour to make a stiff dough.
  5. Knead dough on a well-floured surface until smooth and elastic, about 2 minutes.
  6. Place the dough in a greased bowl.
  7. Cover and let rise in a warm place until light and doubled in size, about 45 to 60 minutes.
  8. Grease two 9x5-inch loaf pans.
  9. Punch down the dough, divide and shape into two loaves.
  10. Place the loaves in the greased pans, cover, and let rise in a warm place until light and doubled in size, about 45 to 60 minutes.
  11. Heat oven to 350°F and bake the loaves for 40 to 50 minutes until deep golden brown and the loaves sound hollow when tapped.
  12. Remove the bread immediately from the pans.
