Ingredients

  • 3 lb. turnips
  • 1 1/2 tsp. sugar
  • dash of pepper
  • 1 c. soft breadcrumbs
  • 1/4 c. butter or margarine
  • 1 1/2 tsp. salt
  • 3 eggs
  • 1 1/2 tsp. lemon juice

Instructions

  1. Cook the turnips until tender, then mash them.
  2. Add butter, sugar, salt, and pepper to the mashed turnips; beat with a mixer until smooth and creamy.
  3. Add eggs one at a time, beating well after each addition until the mixture is soft and fluffy.
  4. Stir in the breadcrumbs and lemon juice until evenly combined.
  5. Pour the mixture into a casserole dish.
  6. If preparing ahead, cool the casserole and chill.
  7. Bake uncovered in a 375°F oven for 50 minutes until the top is slightly brown.
