Ingredients

  • -1.5 lbs beef stew cubes
  • -1.5 lbs ground beef
  • -5 slices bacon
  • -1 red pepper, chopped
  • -1 green pepper, chopped
  • -3 medium-sized onions, chopped
  • -1 28 oz crushed tomatoes
  • -1 small can tomato paste
  • -1 cup dried pinto beans
  • -1 cup dried kidney beans
  • -2 bottles of sam adams beer
  • -6 cloves garlic
  • -2 T cumin
  • -2 T chili powder
  • -1 1/2 tsp salt
  • -1 tsp sugar
  • -lime juice-coupla shakes
  • -2 jalapeno peppers, deseeded, destemmed, deribbed and minced
  • Toppings
  • -sour cream
  • -grated cheese
  • -cilantro, chopped
  • -soft loaf of bread
  • -hot sauce

Instructions

  1. -Prepare beans. Put beans in a pot of cold water and bring to boil. Boil for 5 minutes then bring down to simmer and prepare beef. Drain when beans are beginning to get tender.
  2. -Prepare meat. cook bacon til crispy. Save bacon grease. crumble bacon, set aside. clean out pan. brown beef cubes at high heat, using 1 T bacon grease with each time make sure not to cook too many cubes at a time to avoid steaming. use slotted spoon and set aside beef cubes. brown ground beef. drain.
  3. -in pot, saute gariic and onions briefly, then add all the ingredients. Bring to boil then down to simmer. Simmer until beef cubes and beans are tender (about 1 hour), stirring on an ongoing basis.
  4. -serve with toppings and smile!
