Ingredients

  • 1 lb. Cajun sausage
  • 1 onion, chopped
  • 3 cans dark red kidney beans
  • 1 bell pepper, chopped
  • 1 lb. ground beef chuck
  • 2 cans tomato paste
  • 1 lb. smoked sausage
  • 2 (14 oz.) cans diced tomatoes
  • salt and pepper to taste

Instructions

  1. Brown the Cajun sausage and ground beef with chopped onions, salt, and pepper in a skillet. Drain all grease.
  2. In a large Dutch oven, add the cooked meats, chopped bell pepper, diced tomatoes, tomato paste, kidney beans, sliced smoked sausage, salt, and pepper.
  3. Cook the mixture for 2 hours over low heat, stirring occasionally.
  4. Serve hot with rice.
