  • 3/4 cup shiitake mushrooms
  • 3/4 cup portobello mushrooms
  • 1/4 cup dried porcini mushrooms (soaked in 1/4 cup water for 5 minutes)

  • 1/4 cup minced shallot
  • 1 small onion, peeled and minced
  • 2 tablespoons olive oil or butter
  • 1/4 cup dry sherry
  • 1 quart chicken stock or broth, heated

  • salt and freshly ground black pepper to taste
  • 3 tablespoons fresh tarragon, chopped

Instructions

  1. Separate the stems from the caps of the wild mushrooms.
  2. Do not wash the mushrooms, but rub them with a dry cloth; reserve the caps.
  3. In a heavy 10-inch skillet over medium heat, sauté the wild mushroom stems, shallots, onions, and button mushrooms in olive oil or butter.
  4. After 1 minute, lower the heat and simmer for 5 minutes or until most of the liquid evaporates.
  5. Deglaze with sherry by pouring it over the mushroom mixture and scraping the sides of the pan.
  6. Add the mushroom pieces into the liquid and pour in the hot stock or broth.
  7. Simmer for 3 minutes or until the mushrooms are very soft.
  8. Transfer the mushroom stem mixture into a food processor and puree until smooth.
  9. Return the pureed mixture to the pot and stir in the heavy cream.
  10. Dice the reserved mushroom caps and add them to the soup.
  11. Simmer until the soup has thickened slightly, about 5 to 10 minutes.
  12. Season with salt and freshly ground black pepper to taste.
  13. Ladle into warmed bowls and garnish with chopped tarragon or a swirl of creme fraiche.
