Ingredients

  • 1 lb. mixed beans
  • ham hocks or ham bone
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 qt. tomatoes
  • 1 tsp. chili powder
  • 1 tsp. lemon juice
  • 1 Tbsp. sugar
  • salt and pepper to taste
  • pinch of baking soda

Instructions

  1. Wash the beans well and cover with 6 to 8 cups hot water; bring to a boil for 2 minutes.
  2. Remove from heat and let stand for 1 hour. Drain the beans.
  3. Add 2 quarts cold water and the ham bone to the beans.
  4. Simmer for 1 1/2 hours.
  5. Add the chopped onion, chopped celery, tomatoes, chili powder, lemon juice, sugar, salt, pepper, and a pinch of baking soda.
  6. Let simmer for 30 minutes or until the beans are tender.
