Winter Bean Soup

- Wash the beans well and cover with 6 to 8 cups hot water; bring to a boil for 2 minutes.
- Remove from heat and let stand for 1 hour. Drain the beans.
- Add 2 quarts cold water and the ham bone to the beans.
- Simmer for 1 1/2 hours.
- Add the chopped onion, chopped celery, tomatoes, chili powder, lemon juice, sugar, salt, pepper, and a pinch of baking soda.
- Let simmer for 30 minutes or until the beans are tender.
