Ingredients

  • 5 c. water
  • 1 c. lentils
  • 1/2 c. barley
  • 1 c. celery, chopped or celery tops
  • 1 medium onion, chopped
  • 1 to 2 medium potatoes, diced
  • 2 to 3 chopped carrots
  • 1/4 c. minced parsley
  • salt or salt substitute
  • 1 to 2 packets sugar substitute
  • 1/2 can tomato paste
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. dill leaves (weed)

Instructions

  1. Pick over lentils for stones and weed seeds.
  2. Rinse lentils and add to water in a crock-pot or cooking pot.
  3. Add barley, chopped celery or celery tops, chopped onion, diced potatoes, chopped carrots, Italian seasoning, dill leaves, and tomato paste.
  4. Simmer until vegetables and lentils are tender.
  5. Add minced parsley and sugar substitute.
  6. Salt to taste before serving.
