Ingredients

  • 2/3 cup evaporated milk
  • 1 cup instant cinnamon and spice oatmeal
  • 1 large can yams
  • 1 can crushed pineapple
  • 1/2 cup brown sugar
  • 2 tablespoons butter
  • 1 egg
  • 1 teaspoon vanilla
  • mini marshmallows
  • 1/2 cup chopped pecans

Instructions

  1. Pour evaporated milk over instant cinnamon and spice oatmeal and let sit.
  2. Mix all other ingredients together, mashing the yams as you combine.
  3. Blend the oatmeal mixture with the yam and pineapple mixture.
  4. Pour the combined mixture into a slightly greased baking dish.
  5. Bake at 400°F for 30 minutes.
  6. Top with mini marshmallows and chopped pecans.
  7. Bake until the marshmallows melt and are golden.
