Ingredients

  • 1 c. mashed sweet potatoes
  • 1/3 c. brown sugar
  • 3/4 tsp. cinnamon
  • 3/4 tsp. ginger
  • 1/8 tsp. salt
  • 3/4 c. scalded milk
  • 2 eggs
  • 1 unbaked pie shell
  • 1/4 c. butter or margarine
  • 1/2 c. brown sugar

Instructions

  1. Combine the mashed sweet potatoes, brown sugar, cinnamon, ginger, salt, scalded milk, and beaten eggs.
  2. Pour the mixture into the unbaked pie shell.
  3. Bake at 375°F for 20 minutes.
  4. Top the pie with butter or margarine, brown sugar, and pecans.
  5. Bake an additional 25 minutes until set.
  6. Allow to cool before serving with whipped cream.
