Ingredients

  • 3 1/2 cups grated, uncooked yams or sweet potatoes
  • 1 1/4 cups milk
  • 1/2 cup light corn syrup
  • 3 eggs, beaten
  • 2 tablespoons margarine or butter, softened
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • cream or ice cream

Instructions

  1. Heat oven to 325°F.
  2. Grease an 8 x 8 x 2‑inch square baking dish.
  3. In a bowl, mix grated yams, milk, light corn syrup, beaten eggs, softened margarine, packed brown sugar, ground cinnamon, salt, and ground nutmeg.
  4. Pour the mixture into the prepared dish.
  5. Bake until a knife inserted halfway between center and edge comes out clean, about 1 hour.
  6. Serve with cream or ice cream.
