Ingredients

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 cup sugar
  • 1 cup yams mashed
  • 1 teaspoon lemon juice
  • 4 teaspoons apple pie spice
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts

Instructions

  1. Beat the eggs with an electric mixer for 5 minutes.
  2. Add all other ingredients to the eggs and mix well.
  3. Pour the batter into a well-greased and floured 1 x 10 x 15-inch jelly roll pan.
  4. Sprinkle the top with 1/2 cup chopped nuts.
  5. Bake at 375°F for 10 minutes or until done.
  6. Turn out onto a tea towel sprinkled with powdered sugar.
  7. Roll up like a jelly roll while still warm.
  8. Cool completely, then unroll and fill as desired.
