Yankee Maple Corn Muffins

Ingredients

  • 2 c. all-purpose flour
  • 1 c. yellow corn meal
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 2 large eggs
  • 1/4 c. packed light brown sugar
  • 1 c. milk
  • 1/4 to 1/3 c. maple syrup
  • 6 Tbsp. butter, melted

Instructions

  1. Grease muffin cups.
  2. Thoroughly mix flour, corn meal, baking powder, and salt in a large bowl.
  3. Whisk eggs and brown sugar in another bowl until smooth.
  4. Add milk and maple syrup and whisk to combine.
  5. Pour the wet ingredients into the dry ingredients and add 4 tablespoons of melted butter.
  6. Fold in with a rubber spatula just until dry ingredients are moistened.
  7. Scoop batter into muffin tins.
  8. Bake at 350°F (175°C) for 25 to 30 minutes or until golden brown and firm in the center.
  9. Let cool in the pan for 5 minutes.
  10. Brush tops with the remaining melted butter.
