- Grease muffin cups.
- Thoroughly mix flour, corn meal, baking powder, and salt in a large bowl.
- Whisk eggs and brown sugar in another bowl until smooth.
- Add milk and maple syrup and whisk to combine.
- Pour the wet ingredients into the dry ingredients and add 4 tablespoons of melted butter.
- Fold in with a rubber spatula just until dry ingredients are moistened.
- Scoop batter into muffin tins.
- Bake at 350°F (175°C) for 25 to 30 minutes or until golden brown and firm in the center.
- Let cool in the pan for 5 minutes.
- Brush tops with the remaining melted butter.
