Ingredients

  • 2 c. plain yogurt
  • 1/2 c. sugar
  • 2 egg yolks, beaten
  • 1 1/2 Tbsp. flour
  • 2 Tbsp. lemon juice
  • 1/2 tsp. lemon rind, grated
  • 2 egg whites
  • 1/8 tsp. salt
  • 1 graham cracker pie shell

Instructions

  1. To yogurt, add sugar, egg yolks, flour, lemon rind and lemon juice.
  2. Beat egg whites until stiff; fold into yogurt mixture. Pour mixture into graham cracker crust; bake at 350° for 30 to 40 minutes.
  3. Serves 8.
