Yummy Muffins

Ingredients
- 1/2 cup dry bread crumbs ⓘ
- 1 1/3 cups nonfat dry milk powder ⓘ
- 1 1/2 teaspoons nutmeg ⓘ
- 4 teaspoons baking powder ⓘ
- 1 cup natural bran ⓘ
- 1 teaspoon cinnamon ⓘ
- 1/2 cup raisins
- 1 large unpeeled apple, cut into chunks ⓘ
- 1 large unpeeled orange, cut into chunks ⓘ
- 1 cup liquid egg substitute
- 2 tablespoons lemon juice ⓘ
- 2 tablespoons liquid artificial sweetener ⓘ
Instructions
- In a large bowl, mix together dry bread crumbs, dry milk powder, nutmeg, baking powder, bran, cinnamon, and raisins.
- In a blender, combine apple chunks, orange chunks, liquid egg substitute, lemon juice, and artificial sweetener until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Line muffin tins with paper liners or spray with non-stick spray, then fill each cup with the batter.
- Bake at 350°F (175°C) for 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving.
