Ingredients

  • 1/2 cup dry bread crumbs
  • 1 1/3 cups nonfat dry milk powder
  • 1 1/2 teaspoons nutmeg
  • 4 teaspoons baking powder
  • 1 cup natural bran
  • 1 teaspoon cinnamon
  • 1/2 cup raisins
  • 1 large unpeeled apple, cut into chunks
  • 1 large unpeeled orange, cut into chunks
  • 1 cup liquid egg substitute
  • 2 tablespoons lemon juice
  • 2 tablespoons liquid artificial sweetener

Instructions

  1. In a large bowl, mix together dry bread crumbs, dry milk powder, nutmeg, baking powder, bran, cinnamon, and raisins.
  2. In a blender, combine apple chunks, orange chunks, liquid egg substitute, lemon juice, and artificial sweetener until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. Line muffin tins with paper liners or spray with non-stick spray, then fill each cup with the batter.
  5. Bake at 350°F (175°C) for 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow muffins to cool slightly before serving.
