Yummy Vegetable Soup
Ingredients
- 2 tablespoons oil ⓘ
- 2 small zucchini, diced ⓘ
- 1 large potato, diced ⓘ
- 1 head broccoli, chopped ⓘ
- 1 can corn, drained ⓘ
- 2 carrots, diced ⓘ
- 1 red peppers or 1 green pepper, diced ⓘ
- 1 onion, chopped ⓘ
- 3 cloves garlic, chopped ⓘ
- 1 teaspoon poultry seasoning ⓘ
- 1 teaspoon cumin ⓘ
- salt and pepper ⓘ
- 2 cans diced tomatoes ⓘ
- 1 (8 ounce) can tomato sauce ⓘ
- 3 cups chicken broth ⓘ
- 1 cup water ⓘ
- toppings ⓘ
- shreadded cheddar cheese (optional) ⓘ
Instructions
- Heat large pot and add oil, onion, pepper, garlic, carrot and seasonings.
- Cook until onion becomes soft, then add all ingredients.
- Cover and simmer for about an hour, or until potatoes are tender.
- Top with shreadded cheddar and crumbled crackers.
