Zesty bread pudding combines tender bread with warm spices, raisins, pecans, and coconut for a rich, comforting dessert perfect for family gatherings or special occasions.

Ingredients

  • 7 cups bread
  • 1 quart milk
  • 6 eggs
  • 1/3 cup margarine
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup raisins
  • 1 cup pecans
  • 1 cup coconut

Instructions

  1. Put one slice of bread in the blender at a time to get 7 cups of crumbs.
  2. Mix milk, eggs, sugar, and margarine in a bowl.
  3. Add the bread crumbs, vanilla, cinnamon, and nutmeg to the mixture and stir well.
  4. Fold in raisins, pecans, and coconut.
  5. Pour the mixture into a greased baking dish.
  6. Bake at 350°F for 45 to 55 minutes until set and golden.
