Creamy zucchini Alfredo features tender zucchini ribbons coated in a rich, cheesy sauce, perfect for a light yet indulgent vegetarian meal that delights with fresh flavors.

Ingredients

  • 1 large zucchini
  • 2 Tbsp. olive oil
  • 1/4 cup butter
  • 3/4 cup heavy cream
  • 1 clove garlic
  • Parmesan cheese
  • fresh parsley
  • salt

Instructions

  1. Using a potato or vegetable peeler, peel a large zucchini and cut in half, then scoop out the seeds.
  2. Continue peeling the zucchini into ribbons using the peeler.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the zucchini ribbons to the skillet and sauté until just tender.
  5. In a separate saucepan, melt butter over medium heat.
  6. Add crushed garlic and cook until fragrant.
  7. Pour in heavy cream and simmer for a few minutes until slightly thickened.
  8. Stir in grated Parmesan cheese until melted and smooth.
  9. Season with salt and pepper to taste.
  10. Combine the sautéed zucchini ribbons with the Alfredo sauce.
  11. Garnish with chopped fresh parsley before serving.
