Ingredients

  • 1 lb ground beef
  • 1/4 cup shredded zucchini
  • 1/4 cup seasoned bread crumbs
  • 2 1/2 cups sliced zucchini
  • 14 1/2 oz can pizza-style tomatoes

Instructions

  1. Mix ground beef, shredded zucchini, and seasoned bread crumbs together.
  2. Form the mixture into 8 patties, each about 1/2 inch thick.
  3. Brown the patties on both sides in a large nonstick skillet.
  4. Add sliced zucchini and pizza-style tomatoes to the skillet.
  5. Bring to a boil, then reduce heat, cover, and simmer for 7 to 9 minutes, turning patties and stirring a few times until zucchini is tender.
  6. Add potatoes and simmer for an additional 3 minutes.
