Ingredients

  • 1/4 cup oil
  • 3/4 cup applesauce
  • 2 cups sugar
  • 2 cups zucchini, grated or blended
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup nuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour 2 loaf pans.
  2. Blend oil, applesauce, sugar, zucchini, and vanilla until well combined.
  3. In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  4. Add dry ingredients to the wet mixture and stir until just combined.
  5. Fold in nuts.
  6. Divide batter evenly between the prepared loaf pans.
  7. Bake about 1 hour until the loaves are firm and a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from pans and slicing.
