- Combine all ingredients except raisins, nuts, and zucchini until well blended.
- Add raisins, nuts, and grated zucchini and blend well.
- Grease and flour two 9 x 5-inch loaf pans.
- Divide the batter evenly between the two pans.
- Bake at 350°F (175°C) for 1 hour.
- Let cool in pans for 10 minutes.
- Remove from pans and continue cooling on a rack.
