Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup salad oil
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup nuts
  • 1 cup raisins
  • 2 cups grated zucchini

Instructions

  1. Combine all ingredients except raisins, nuts, and zucchini until well blended.
  2. Add raisins, nuts, and grated zucchini and blend well.
  3. Grease and flour two 9 x 5-inch loaf pans.
  4. Divide the batter evenly between the two pans.
  5. Bake at 350°F (175°C) for 1 hour.
  6. Let cool in pans for 10 minutes.
  7. Remove from pans and continue cooling on a rack.
