Ingredients

  • 1 lb. ground beef
  • 1 medium onion
  • 2 garlic cloves
  • 15 oz. tomato sauce
  • 1 tsp. salt
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 1/2 tsp. marjoram
  • 1 1/2 cups cottage cheese
  • 1/2 cup Parmesan cheese
  • 4 medium zucchini
  • 1 cup mozzarella cheese

Instructions

  1. Brown the hamburger, chopped onion, and minced garlic in a skillet.
  2. Stir in tomato sauce, salt, basil, oregano, thyme, and marjoram. Simmer uncovered for 10 minutes.
  3. In a bowl, combine cottage cheese, an egg, and Parmesan cheese; set aside.
  4. Slice the zucchini into thin rounds.
  5. In a greased 13x9x2-inch casserole dish, layer half of the zucchini, half of the cottage cheese mixture, and half of the meat mixture.
  6. Repeat with the remaining zucchini, cottage cheese mixture, and meat mixture.
  7. Bake at 350°F (175°C) for 1 hour until bubbly and golden.
