Ingredients

  • 3/4 cup oleo
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 cup coconut
  • 2 cups shredded zucchini
  • 3/4 cup chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream oleo until light and fluffy.
  3. Gradually beat in brown sugar and white sugar.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in vanilla extract.
  6. In a separate bowl, combine flour and baking soda.
  7. Gradually add dry ingredients to the wet mixture, mixing well.
  8. Stir in shredded zucchini, coconut, and chopped nuts.
  9. Spread the batter evenly on a well-greased cookie sheet or 15 x 10 x 1-inch pan.
  10. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  11. Cool on wire rack.
  12. Spread frosting over the warm layer and cut into squares.
