Ingredients

  • 3 medium zucchini
  • 2 cups sliced fresh mushrooms
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 cup margarine
  • 2 medium tomatoes, cut into wedges
  • 1/4 cup Parmesan cheese

Instructions

  1. Slice the zucchini and combine with sliced fresh mushrooms in a 1 1/2-quart glass casserole.
  2. Sprinkle with garlic powder and salt.
  3. Dot with margarine or butter.
  4. Microwave, covered, for 7 to 8 minutes or until zucchini is tender.
  5. Stir in the cut tomato wedges and Parmesan cheese.
  6. Microwave, covered, for an additional 2 to 3 minutes, or until hot and cheese is melted.
