Ingredients

  • 2 or 3 medium zucchini, grated
  • 1 1/2 tsp. salt
  • 4 eggs
  • 1 c. grated Cheddar cheese
  • 1/2 c. butter or margarine, melted
  • 1/2 c. sour cream
  • 1 small onion
  • 2 Tbsp. sugar
  • 1 1/2 c. self-rising cornmeal

Instructions

  1. Preheat oven to 400°F.
  2. Grease an 8 x 8 x 2-inch pan.
  3. Grate the zucchini and measure 2 to 3 cups.
  4. In a large bowl, combine grated zucchini, salt, eggs, grated Cheddar cheese, melted butter, sour cream, chopped small onion, sugar, and self-rising cornmeal.
  5. Mix until well combined.
  6. Pour the batter into the prepared pan.
  7. Bake in the preheated oven for approximately 40 minutes or until golden and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.
