- Preheat oven to 400°F.
- Grease an 8 x 8 x 2-inch pan.
- Grate the zucchini and measure 2 to 3 cups.
- In a large bowl, combine grated zucchini, salt, eggs, grated Cheddar cheese, melted butter, sour cream, chopped small onion, sugar, and self-rising cornmeal.
- Mix until well combined.
- Pour the batter into the prepared pan.
- Bake in the preheated oven for approximately 40 minutes or until golden and a toothpick inserted into the center comes out clean.
