Zucchini Corn Muffins

Ingredients

  • 12 oz. zucchini
  • 1/2 tsp. salt
  • 1 1/4 c. all-purpose flour
  • 3/4 c. corn meal
  • 1 Tbsp. baking powder
  • 2 tsp. sugar
  • 3/4 tsp. salt
  • few grains ground hot red pepper
  • 3/4 c. buttermilk
  • 3 Tbsp. vegetable oil
  • 1 egg
  • 1/2 c. shredded sharp Cheddar cheese (2 oz.)

Instructions

  1. Preheat oven to 425°.
  2. Coat inside of 16 medium size muffin cups with nonstick cooking spray.
  3. Shred zucchini.
  4. Place in colander over bowl.
  5. Sprinkle with salt.
  6. Set aside.
