Ingredients

  • 2 lb. zucchini (about 4 cups), sliced
  • 2 Tbsp. minced onion
  • 1/4 cup melted butter
  • 3 eggs
  • 1/2 cup milk
  • 2/3 cup grated cheese
  • dash of pepper
  • 1/3 cup Parmesan cheese
  • 2 Tbsp. dry breadcrumbs
  • 3/4 tsp. salt

Instructions

  1. In a large skillet, sauté zucchini and minced onion in melted butter until tender.
  2. Set aside.
  3. In a large mixing bowl, beat eggs and milk.
  4. Add half of the grated cheese, half of the Parmesan cheese, breadcrumbs, salt, and pepper.
  5. Stir in the cooked zucchini and onion mixture.
  6. Turn the mixture into a buttered 1 1/2-quart casserole dish.
  7. Sprinkle the top with the remaining cheeses.
  8. Bake uncovered in a preheated 350°F oven for approximately 35 to 40 minutes, until lightly browned.
  9. Serve and enjoy.
