Ingredients

  • 1 cup oil
  • 2 cups sugar
  • 3 eggs
  • 2 cups peeled, grated zucchini
  • 1/2 teaspoon salt
  • 3 1/2 cups flour
  • 2 teaspoons soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla
  • 2 cups seedless raisins
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine oil, sugar, and eggs until well blended.
  3. Stir in grated zucchini and vanilla extract.
  4. In a separate bowl, whisk together flour, salt, baking soda, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in raisins and chopped walnuts.
  7. Pour batter into the prepared loaf pan.
  8. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
