Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 cup chopped pecans or walnuts
  • 2 large zucchinis
  • 2 eggs or Egg Beaters
  • 1 1/2 cups sugar
  • 3/4 cup honey
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Combine all-purpose flour, salt, baking powder, baking soda, and ground cinnamon in a bowl.
  2. Stir in chopped pecans or walnuts.
  3. Peel zucchini and shred enough to measure 2 cups.
  4. In a separate bowl, mix shredded zucchini, eggs or Egg Beaters, sugar, honey, vegetable oil, and vanilla extract.
  5. Add the zucchini mixture to the flour mixture, stirring until the dry ingredients are moistened.
  6. Spoon the batter into two greased loaf pans.
  7. Bake at 350°F (175°C) for 1 hour and 5 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pans for 10 minutes.
  9. Turn out of pans and cool completely before slicing.
