- Peel zucchini and shred enough to measure 2 cups.
- In a separate bowl, mix shredded zucchini, eggs or Egg Beaters, sugar, honey, vegetable oil, and vanilla extract.
- Add the zucchini mixture to the flour mixture, stirring until the dry ingredients are moistened.
- Spoon the batter into two greased loaf pans.
- Bake at 350°F (175°C) for 1 hour and 5 minutes or until a toothpick inserted in the center comes out clean.
