Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 2 cups grated and peeled zucchini
  • 1 cup crushed and drained pineapple
  • 1/2 cup nuts
  • 1/2 cup raisins

Instructions

  1. Mix eggs, oil, and sugar in a bowl.

  3. Stir in grated and peeled zucchini, crushed and drained pineapple, nuts, and raisins.
  4. Pour the batter into lightly greased or sprayed loaf pans.
