Zucchini Orange Salad

Ingredients

  • 2 to 3 medium zucchini squash, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 c. celery, diced
  • 1 (16 oz.) can green beans, drained
  • 1 can water chestnuts, sliced and drained
  • 1 (16 oz.) can wax beans, drained
  • 1 (15 oz.) can mandarin oranges, drained
  • 1 1/2 c. sugar
  • 1 c. vinegar
  • 1 Tbsp. water
  • 1 tsp. salt

Instructions

  1. In large bowl, combine zucchini, onion and celery.
  2. Pour boiling water over to cover; let stand 1 hour.
  3. Drain and add green beans, water chestnuts, wax beans and mandarin oranges.
