Ingredients

  • 2 lb. zucchini
  • 2 small onions
  • 1/4 c. salt
  • 2 c. white vinegar
  • 2 c. sugar
  • 1 tsp. celery seed
  • 1 tsp. turmeric

Instructions

  1. Wash zucchini and cut into thin slices.
  2. Peel and quarter onions and cut into thin slices.
  3. Cover vegetables with water and add salt.
  4. Let stand for 2 hours, then drain thoroughly.
  5. Bring remaining ingredients to a boil and pour over vegetables.
  6. Let stand for 2 hours, then bring to a boil and boil for 5 minutes.
  7. Pack in hot sterilized jars and seal.
