Zucchini Rectangle Bars

Ingredients

  • 3 eggs, slightly beaten
  • 1/4 c. butter, melted
  • 1/2 c. sour cream
  • 1/2 c. yogurt
  • 3/4 c. sugar
  • 2 c. zucchini
  • 2 Tbsp. syrup (maple)
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 c. whole wheat flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 2/3 c. raisins
  • 2/3 c. walnuts

Instructions

  1. Mix together the eggs, butter, sour cream, yogurt, sugar, zucchini and syrup; set aside.
  2. Mix remaining ingredients together. Combine mixtures.
  3. Add nuts and mix well.
  4. Spread in a 9 x 13-inch greased and floured pan.
  5. Bake at 350° for 55 minutes. Cool.
  6. Cut into rectangles.
  7. Dip in glaze and decorate.
