  • 10 c. grated zucchini
  • 3 large onions, chopped
  • 5 Tbsp. salt
  • 2 1/4 c. cider vinegar
  • 5 c. sugar
  • 2 tsp. celery seed
  • 1 tsp. black pepper
  • 1 tsp. dry mustard
  • 1 tsp. nutmeg
  • 1 tsp. turmeric
  • 1 (3 oz.) jar pimento or 1 red pepper, chopped
  • 1 green pepper, chopped

Instructions

  1. Mix grated zucchini and chopped onions; add salt. Mix well. Wash and drain.
  2. In a large pan, add remaining ingredients. Mix well.
  3. Simmer 5 to 10 minutes.
  4. Can in sterile jars. Process 5 minutes in boiling water to ensure sealing.
