Ingredients

  • 1 lb. Italian style chicken sausage
  • 3 diced green peppers
  • 2 large chopped onions
  • 12 oz. sliced mushrooms
  • 2 medium diced zucchini
  • 2 Tbsp. tomato paste
  • 2 Tbsp. fresh oregano
  • salt and pepper

Instructions

  1. In a skillet, poach the Italian style chicken sausage in 1/4-inch of water for 15 minutes.
  2. Cut each sausage into 4 pieces and place in a large saucepan.
  3. Add the diced green peppers, chopped onions, sliced mushrooms, diced zucchini, tomato paste, and fresh oregano to the saucepan.
  4. Cook until vegetables are tender and flavors meld, about 20 minutes.
  5. Season with salt and pepper to taste and serve warm.
