Ingredients

  • 3 small zucchini, washed, dried, scraped and coarsely grated
  • 2 eggs
  • 2 scallions, chopped
  • 1/2 c. fresh mint leaves, chopped
  • 1/2 c. parsley, chopped
  • 1/2 c. Gruyere cheese, grated
  • 1/2 c. flour
  • salt and pepper
  • cayenne pepper

Instructions

  1. Put grated zucchini in a large bowl.
  2. Add eggs, chopped scallions, mint, parsley, and grated Gruyère to the zucchini and mix well.
  3. Gradually add flour, stirring until a thick batter forms.
  4. Season with salt, pepper, and a pinch of cayenne pepper.
  5. Heat oil in a deep pan to 375°F (190°C).
  6. Drop tablespoon‑sized spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
  7. Remove fritters with a slotted spoon and drain on paper towels before serving.
