Zucchini Slices

Ingredients

  • 8 cups Zucchini, Grated
  • 8 slices Bacon, Crisp
  • 1 whole Medium Onion, Finely Chopped
  • 1-1/2 cup Shredded Cheese (any)
  • 1-1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1/2 cups Oil
  • 6 whole Eggs
  • Salt And Pepper, To Taste

Instructions

  1. Mix the first 6 ingredients in a large bowl.
  2. Mix the oil and eggs in a separate bowl, then add to the first bowl and mix well.
  3. Line a large cookie sheet with foil and grease well.
  4. Pour the mix onto sheet and bake for 50 minutes at 370 degrees until set. Season with salt and pepper, to taste.
  5. Let cool then flip the whole thing over. Peel the foil off slowly, and flip back over.
  6. Use a pizza cutter to slice and serve.
