- In a large saucepan, cook sliced zucchini in boiling water until crisp-tender, about 4 to 5 minutes.
- Drain well and set aside.
- In the same saucepan, cook chopped onion and green pepper in oleo until tender.
- Remove from heat and add drained mushrooms, dry spaghetti sauce mix, water, and tomato paste.
- Mix well until combined.
- Gently stir in cooked zucchini and shredded Mozzarella cheese.
- Transfer the mixture to a 9 x 13-inch baking pan.
- Top with additional grated cheese.
- Bake at 350°F for 35 minutes until bubbly and golden.
