Ingredients

  • 2 1/2 lb. zucchini
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/4 c. oleo
  • 1 (3 oz.) can mushrooms, drained
  • 1 package dry spaghetti sauce mix
  • 1 c. water
  • 1 (6 oz.) can tomato paste
  • 1 (4 oz.) package shredded Mozzarella cheese

Instructions

  1. In a large saucepan, cook sliced zucchini in boiling water until crisp-tender, about 4 to 5 minutes.
  2. Drain well and set aside.
  3. In the same saucepan, cook chopped onion and green pepper in oleo until tender.
  4. Remove from heat and add drained mushrooms, dry spaghetti sauce mix, water, and tomato paste.
  5. Mix well until combined.
  6. Gently stir in cooked zucchini and shredded Mozzarella cheese.
  7. Transfer the mixture to a 9 x 13-inch baking pan.
  8. Top with additional grated cheese.
  9. Bake at 350°F for 35 minutes until bubbly and golden.
