Ingredients

  • 4 cups squash
  • 2 carrots, shredded
  • 1 small onion, grated
  • 1 small jar pimentos (optional)
  • 1 can cream of chicken soup, undiluted
  • 1/2 cup sour cream
  • 1/2 package Pepperidge Farm stuffing mix
  • 1/3 cup melted butter

Instructions

  1. Cut the unpared squash into bite-sized pieces.
  2. Lightly cook the squash and drain.
  3. Mix the dressing with the melted butter.
  4. Combine all ingredients with half of the dressing mixture.
  5. Put the mixture into a casserole dish.
  6. Top with the remaining dressing.
  7. Bake for 25 minutes or until brown and bubbly at 350°F.
