Ingredients

  • 1 1/2 lb. zucchini
  • 1 tsp. salt
  • 1/2 tsp. parsley
  • 2 c. tomatoes
  • 1 Tbsp. margarine
  • 1 tsp. onion
  • 1/4 tsp. oregano

Instructions

  1. Combine zucchini and seasonings in a casserole dish.
  2. Cover the casserole.
  3. Place in the oven and cook for 15 minutes.
  4. Add tomatoes and continue cooking for an additional 10 minutes.
