Ingredients
- 1 cup tomato ⓘ
- 1/2 cup red and green onion ⓘ
- 1 cup cucumber ⓘ
- 1 cup red and green pepper ⓘ
- 1/3 cup Anaheim pepper ⓘ
- 1 cup celery ⓘ
- 1/3 cup fresh parsley, finely chopped ⓘ
- 2 cloves garlic, minced or crushed ⓘ
- 2 cups tomato juice ⓘ
- 3 Tbsp red sherry wine vinegar
- 1/2 cup white wine ⓘ
- 1/2 Tbsp cumin ⓘ
- 2 Tbsp basil ⓘ
- 1 Tbsp lemon juice ⓘ
- 1 tsp salt ⓘ
- 1/2 tsp white pepper ⓘ
Instructions
- Finely chop all vegetables (a food processor is ideal for this).
- Combine the chopped vegetables with tomato juice, red sherry wine vinegar, white wine, cumin, basil, lemon juice, salt, and white pepper.
- Mix well to combine all ingredients.
- Refrigerate the gazpacho for at least 24 hours before serving to allow flavors to meld.
