Ingredients

  • 1 cup tomato
  • 1/2 cup red and green onion
  • 1 cup cucumber
  • 1 cup red and green pepper
  • 1/3 cup Anaheim pepper
  • 1 cup celery
  • 1/3 cup fresh parsley, finely chopped
  • 2 cloves garlic, minced or crushed
  • 2 cups tomato juice
  • 3 Tbsp red sherry wine vinegar
  • 1/2 cup white wine
  • 1/2 Tbsp cumin
  • 2 Tbsp basil
  • 1 Tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp white pepper

Instructions

  1. Finely chop all vegetables (a food processor is ideal for this).
  2. Combine the chopped vegetables with tomato juice, red sherry wine vinegar, white wine, cumin, basil, lemon juice, salt, and white pepper.
  3. Mix well to combine all ingredients.
  4. Refrigerate the gazpacho for at least 24 hours before serving to allow flavors to meld.
