Ingredients

  • 1 cup walnuts
  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 1/2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking powder
  • 2 cups grated zucchini
  • 1 cup raisins
  • 1 teaspoon vanilla extract

Instructions

  1. Chop walnuts.
  2. Beat eggs; gradually beat in sugar, then oil.
  3. Combine the egg mixture with grated zucchini, alternating.
  4. Stir in raisins, walnuts, and vanilla extract.
  5. Pour batter into two greased and lightly floured loaf pans.
  6. Bake at 350°F for approximately 1 hour or until loaves test done.
  7. Let stand about 10 minutes, then turn out onto wire racks to cool.
  8. Optional: Lightly frost with a mixture of confectioners' sugar, butter, vanilla, and milk.
