Zucchini Wonton Rolls

Ingredients

  • 2 large zucchini
  • 2 large carrots
  • 1 medium onion
  • 1 cup black olives
  • 1 cup ricotta cheese
  • 2 tablespoons hot mustard or horseradish
  • 1 teaspoon black pepper
  • 1 large egg
  • wonton wraps

Instructions

  1. Prepare zucchini and carrots by grating them.
  2. Let the grated vegetables sit in cheesecloth and lightly salt them.
  3. Squeeze out excess water and drain for at least 40 minutes.
  4. Mix the grated vegetables with chopped onion, chopped olives, ricotta cheese, hot mustard or horseradish, black pepper, and beaten egg.
  5. Place a spoonful of the mixture onto each wonton wrap and roll up to enclose the filling.
  6. Cook the rolls as desired, such as baking or frying, until golden and heated through.
