Zucchini Yeast Bread

Ingredients

  • 1 lb. zucchini, grated
  • 2 Tbsp. salt
  • 1 pkg. active dry yeast
  • 1 1/4 cup lukewarm water
  • 3 1/2 cups flour
  • olive oil (for brushing)

Instructions

  1. Preheat oven to 425°F.
  2. In a colander, alternate layers of grated zucchini and salt. Leave for 30 minutes, then squeeze out moisture with hands.
  3. Combine the yeast with 1/4 cup of lukewarm water. Stir and leave for 15 minutes to dissolve.
  4. Place zucchini, yeast mixture, and flour in a bowl. Stir together and add just enough of the remaining water to form a rough dough.
  5. Transfer the dough to a floured surface and knead until smooth and elastic.
  6. Return the dough to the bowl; cover with a plastic bag. Let it rise in a warm place until doubled in volume, about 1 1/2 hours.
  7. Grease a baking sheet.
  8. Punch down the risen dough with your fist and knead into a tapered cylinder.
  9. Place the dough on the prepared baking sheet. Cover and let rise in a warm place until doubled in volume, about 45 minutes.
  10. Brush the top with olive oil.
  11. Bake until golden, about 45 minutes.
  12. Cool on a rack before slicing.
