Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups finely chopped or grated zucchini (unpeeled)
  • 1 teaspoon vanilla
  • 2 1/2 cups sugar
  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 1/2 teaspoons baking powder
  • 1 cup nuts, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour the pans.
  2. In a large mixing bowl, combine eggs, oil, vanilla, and sugar.
  3. Stir in the grated zucchini.
  4. In a separate bowl, whisk together flour, cinnamon, salt, soda, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing well.
  6. Fold in chopped nuts if using.
  7. Pour the batter into the prepared pans, filling them two-thirds full.
  8. Bake medium loaves for 1 hour, large loaves for 1 1/2 hours, or small loaves for 45 minutes at 350°F.
  9. Remove from oven and let cool slightly.
  10. Serve warm with butter or cream cheese.
