Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. brown sugar
  • 4 eggs
  • 1 1/2 c. oil
  • 1 c. white sugar
  • 2 c. grated carrots
  • 1 can (8 oz.) crushed pineapple, drained
  • 1 1/2 c. chopped pecans
  • 1 can (3 1/2 oz.) coconut

Instructions

  1. Combine flour, baking powder, baking soda, and salt in a mixing bowl.
  2. Add brown sugar, white sugar, eggs, oil, grated carrots, crushed pineapple, chopped pecans, and coconut (if using).
  3. Mix until all ingredients are well incorporated.
  4. Grease and flour three 9-inch cake pans.
  5. Divide batter evenly among the prepared pans.
  6. Bake at 350°F (175°C) for 35 to 40 minutes.
  7. Remove from oven and cool completely before frosting.
