Ingredients

  • 5 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 cup butter
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 teaspoons cloves
  • 1 1/2 teaspoons allspice
  • 1 cup raisins
  • 1 cup chopped nuts
  • 1 cup jam

Instructions

  1. Cream the butter until smooth, then gradually add sugar and beat until light and fluffy.
  2. Add well beaten eggs to the creamed mixture and mix well.
  3. Sift together the flour, cinnamon, cloves, allspice, and a pinch of salt.
  4. Add baking soda to the buttermilk and stir to combine.
  5. Alternate adding the flour mixture and buttermilk to the creamed mixture, beginning and ending with the flour mixture, mixing well after each addition.
  6. Fold in the raisins and chopped nuts.
  7. Add the jam and gently mix to incorporate.
  8. Grease three cake pans and divide the batter evenly among them.
  9. Bake at 325°F (160°C) for approximately 40 minutes or until a toothpick inserted in the center comes out clean.
