Ingredients

  • 3 eggs
  • 1 cup shredded peeled potatoes
  • 1 cup shredded carrots
  • 2.5 cups shredded peeled zucchini
  • 1/2 cup shredded onion
  • 1/2 cup snipped parsley
  • 1/2 teaspoon salt
  • 3/4 cup matzo meal
  • 1 to 2 tablespoons peanut oil
  • poached apples
  • 1/2 teaspoon pepper

Instructions

  1. In a bowl, combine eggs, shredded potatoes, carrots, zucchini, onion, parsley, salt, and pepper.
  2. Stir in matzo meal until well mixed.
  3. Shape the mixture into flat cakes using 1 to 2 tablespoons of the mixture for each latke.
  4. Heat peanut oil in a skillet over medium heat.
  5. Cook the latkes until golden brown and crispy on both sides, about 4-5 minutes per side.
  6. Serve hot with poached apples or your preferred toppings.
