Ingredients

  • 5 eggs
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1 pound pineapple
  • 1 pound cherries (red and green)
  • 4 cups pecans
  • 1/2 ounce lemon flavoring
  • 1/2 ounce vanilla flavoring
  • 1/2 pound butter
  • 1 3/4 cups flour

Instructions

  1. Cream the butter and sugar together.
  2. Add one egg at a time to the creamed mixture.
  3. Add 1 cup of flour to the mixture and blend well.
  4. Mix the remaining flour with the pineapple, cherries, and pecans.
  5. Combine the creamed mixture with the fruit and nut mixture.
  6. Add lemon and vanilla flavorings last.
  7. Pour the batter into a greased and floured Bundt or tube pan.
  8. Bake at 250°F (120°C) for 3 hours.
