Ingredients

  • 6 cups diced peeled cooked potatoes
  • 4 hard cooked eggs chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped pickles
  • 1/3 cup chopped onion
  • 1/3 cup chopped radishes
  • 1/2 cup mayonnaise
  • 3 Tbsp sugar
  • 1 Tbsp vinegar
  • 1 Tbsp milk
  • 1 1/2 tsp prepared mustard
  • 1/2 tsp salt
  • Paprika, optional

Instructions

  1. In a bowl, combine diced, peeled, cooked potatoes, chopped celery, chopped hard-cooked eggs, chopped pickles, chopped onion, and chopped radishes.
  2. In another bowl, whisk together mayonnaise, sugar, vinegar, milk, prepared mustard, and salt.
  3. Mix the dressing well until smooth.
  4. Pour the dressing over the potato mixture and stir gently to coat all ingredients evenly.
  5. Cover and chill the salad for at least 1 hour to allow flavors to meld.
  6. Before serving, sprinkle with paprika if desired.
